Why has my S5 EK started pulling sour, under-extracted shots?

On a heat exchanger that usually means brew temperature has dropped, either from a pressurestat that has drifted low or scale building in the HX coil. We descale the coil separately from the steam boiler, reset the pressurestat, and confirm brew temperature at the group with a Scace device. If the hardware is in spec, then it is a grind or dose conversation.

What's a cooling flush on the S5 EK, and do my baristas need to do one?

Yes, and it matters on any heat-exchanger machine. After an idle spell the water sitting in the HX coil runs too hot, so a short flush before the shot brings it back to brew temperature. We set the machine up correctly and walk your team through the flush so the first shot of a lull is not scorched.

My S5 EK group is weeping around the portafilter. Is that serious?

Not serious, just routine wear. The group gasket hardens over 12 to 18 months on a busy bar and starts to weep. We replace the gasket and dispersion screen, clean the threads, and reseat under brew pressure to confirm a dry seal across several shots.

Does the S5 EK come in two and three group, and do you service both?

Why won't my S5 EK hold steady steam pressure?

Weak or swinging steam pressure is the boiler not sitting at setpoint, usually scale on the element or a worn mechanical pressurestat.
