The Café Racer is Sanremo's specialty-bar workhorse, built around CDS three-phase extraction control. It comes in two finishes, the oxidized-copper Renegade and the open-frame Naked, both serviced the same way. Per-group PID, manual paddle flow profiling, and a tactile feel competition baristas favour make it a fixture in third-wave cafes. On the bench the work lands where you would expect: group gaskets and screens, the pre-infusion solenoids, the paddle and CDS pressure, brew-boiler PID, and the pump.

A weeping gasket is routine wear. We renew the gasket and dispersion screen, clean the threads, and reseat under brew pressure to confirm the seal.
Channelling and pitting come from oil baking onto the screen. We fit a fresh dispersion screen and backflush the group with detergent.
A sticking pre-infusion solenoid is scale on the seat or a worn coil. We test the coil, descale the valve, and replace the solenoid if it is intermittent, then check pre-infusion timing against spec.
Pressure short of 9 bar is pump wear, OPV drift, or an inlet-screen clog. We gauge brew pressure, isolate the cause, set the OPV, and quote a pump replacement if it is needed.
Hammering at shot start is air, a starved inlet, or a worn vane. We bleed the line, confirm inlet pressure, and open up the pump head.
Swinging steam pressure on mechanical-stat machines is pressurestat wear. We test it against a reference gauge and replace it if it is out of tolerance.
Each Café Racer group has its own boiler and PID, so drift is a calibration job. With a Scace device per group we read brew temperature, reset the PID offsets, and confirm stability across ten shots.
Low steam pressure is scale, a drifting pressurestat, or a sensor fault. We descale, verify the pressurestat or steam PID sensor, and replace the component at fault.
Pooling water is an internal line crack, a brew-group seal, or an HX fitting. We pressure-test the circuit and trace the leak to its source.
A boiler that will not fill is a failed solenoid, a scaled valve seat, or a level probe scaled over. We test the solenoid, descale, and replace the probe if needed.
The joystick cartridge wears with use. We rebuild it with fresh O-rings and a new seat, descale the steam path, and verify clean shut-off.
A wand that drips when closed has a worn valve cartridge or scale on the seat. We rebuild the valve, descale, and confirm a dry shut-off.
Drifting dose buttons are mineral buildup on the flow meter. We clean the meter, confirm pulse output, and reprogram the volumetric doses.
We read the fault history through the service interface, identify the code, and address the root cause.
