Nuova Simonelli · Next-gen specialty traditional with automation
The NUOVA Aurelia is Nuova Simonelli's next-generation flagship, unveiled at HostMilano in 2023. It pairs traditional Aurelia thermal engineering with two automation layers: E-Milk, which froths dairy and plant-based milks across up to nine programmed recipes, and C-Automation, which ties the machine and grinder into one dose-controlled loop. Five configurations run from single-boiler volumetric to full multi-boiler, rated up to 450 shots a day. The machines in the field are still young, so most of what we see is calibration work rather than wear.

E-Milk holds nine programmable recipes, and each depends on a milk temperature probe, an air-intake calibration, and a steady steam pressure reference. Any of the three drifting pushes every recipe off target at once. We sanitize the milk pathway, recalibrate the setpoints, and pour each programmed recipe to confirm it's back.
Yes, that's part of the design: recipes can be tuned per milk, dairy or plant-based. Plant milks do foul the pathway faster, so the daily clean matters more, not less. If a particular milk won't texture, we recalibrate that recipe rather than fight the carton.
Try a restart of both machine and grinder first, because firmware mismatches after updates cause many of these. If the link keeps dropping, we verify the connection, bring both firmware levels current, and replace the communication module only if drops persist after that. Espresso keeps pouring in the meantime; you just lose the automated dose loop.

Yes. The espresso core shares hardware logic with the wider Aurelia family, so gaskets, valves, sensors, and pump parts are accessible now. Platform-specific modules like E-Milk components order through the normal parts channels with a short lead time, and we tell you that lead time before you commit.
The thermal platform underneath is mature; what's new is the automation wrapped around it. Our service experience so far is mostly calibration rather than failures. If your program needs consistent milk across staff turnover, the automation pays for itself quickly.
All five share the same core, so none of them is a service liability. The single-boiler volumetric has the fewest parts to look after; the full multi-boiler builds add sensors and circuits but nothing exotic. Buy for your volume, not for serviceability.
